Introducing: The Holy Trinity of Tacos

Everything you thought you knew is about to change. The perfect taco is a balance of three core elements.

Tortilla

The foundation. A warm, soft tortilla is the vessel that carries flavor to new heights.

A true taco starts with a corn tortilla made from nixtamal.

Flour tortilla? Generally accepted, especially with melted cheese.

Hard shells? No way! Sorry that someone inflicted so much harm on you.

...But wait! Where's the ground beef? The "Taco seasoning"?
Come on, people! Is this American chili or real TACOS?

Salsa

But is it spicy?
Of course it's hot spicy! It's salsa, not honey glaze.
A vibrant salsa ties everything together, adding spice and acidity. Green, red or guacamole are the basics.
In the real world, salsa and lime are always free and unlimited. Otherwise is a rip off.

Taco Crimes: A Guide

Ditch Burritos and Hard Shells

A massive wrap of a questionable mix of EVERYTHING inside. Crunchy, ultra-processed and pre-packaged shells.

Time to bury those inventions deep in the past!

Ground Beef Belongs in a Burger

If your "taco meat" is ground beef swimming in powder from a packet, you're not making tacos—you're making sloppy joes for a different bun. Real tacos celebrate the texture and flavor of actual cuts of meat.

Leave the ground beef for burger night.

There is Nothing more American than ...Mexican Cheese Blend

It's all lies, such cheese doesn't exist (or like people say: Only in the United States of America). While some versions of a taco will come with melted cheese, topping it with Cheddar and Monterey shreds is definitely not a thing.

Maybe you want to save that for your chilli dog.

Load it with Lettuce and Cheese ...NOT!

Less is more. Authentic tacos focus on the quality of the meat, topped simply with cilantro, onion, and a squeeze of lime.

Sour cream, yellow corn, a mountain of lettuce, pickles (really?).

Never again!

"Original" Taco Seasoning

From the creators of Queso Dip, Mexican Cheese Blend, Street Corn Dip... Real flavor comes from quality meat and a well-crafted mix of spices, adobos, and perfected cooking methods. That questionable powder from a packet?

Only the marketing department knows what's really in there.

Bottled Sauces?

Absolutely not. Not much to say, any bottled sauce will not pass the test. This is a culinary felony.

Please respect the taco. And yourself.

Taqueria Red Flags

Watch for these signs of danger

🚩 If the protein options start with Ground Beef, start considering a second option for diner.
🚩 If they offer Burritos, Nachos, Chimichangas, probably the chef visited Cancún during his childhood and fell in love with "mexican" food ...when he learned to cook, back in the US.
🚩 If the tortillas are cold, stiff, or come direct from a plastic bag, you can see: The tortilla MUST be warm. With no effort in the foundation, the result will surely fail.
🚩 If they tell you your dish is Cantina Style. Cantinas are traditional places to consume alcoholic drinks, not a cuisine style.

If you are in a taqueria and see any of these red flags...
